From chicken to chips, there are lots of food to be excited for in 2021.


Chipotle Mexican Grill’s newest menu item might make it easier to keep New Year’s resolutions – at least for a limited time.

The fast-casual chain announced the nationwide launch of Cilantro-Lime Cauliflower Rice Monday.

Chipotle said in a news release the plant-based option with freshly grilled, riced cauliflower is a twist on its classic white rice recipe “by using the same fresh cilantro and lime ingredients, and similar culinary techniques.”

It costs an extra $2 and will be available in-restaurant and through the Chipotle app, and third-party delivery partners.

Through Jan. 11, Chipotle says it is waiving the delivery fee on any U.S. Chipotle app and order of $10 or more that includes the cauliflower rice. Service fees apply.

The chain says the new rice is compliant with Keto, Whole30, Paleo, Vegan, and Vegetarian diets and has four grams of net carbs per serving.

The rice was tested in restaurants in Denver and across Wisconsin last year as part of Chipotle’s stage-gate process. The chain is testing smoked brisket as a new protein option at 64 restaurants throughout Cincinnati, Ohio, and part of Sacramento, California.

Chipotle also announced it has four new lifestyle bowls that include the rice. Like with its other lifestyle bowls these are digital exclusives and can be ordered on the Chipotle app and at

Here are descriptions of the new bowls from Chipotle:

Whole30 Bowl: Cilantro-Lime Cauliflower Rice, chicken, fajita veggies, fresh tomato salsa and guac.

Keto Bowl: Cilantro-Lime Cauliflower Rice, chicken, tomatillo-red salsa, cheese and guac.

Vegetarian Salad Bowl: Supergreens lettuce blend, Cilantro-Lime Cauliflower Rice, black beans, fajita veggies, fresh tomato salsa and guac.

Vegan Bowl: Cilantro-Lime Cauliflower Rice, black beans, sofritas, fresh tomato salsa, roasted chili-corn salsa and romaine lettuce.
