Espresso Chocolate Chip Cookies
Prep time: 30 minutes
Cooking time: 20 minutes
Makes: 8-10 cookies

Espresso Chocolate Chip Cookies

Ingredients
½ cup unsalted butter
2 tsp instant espresso powder
½ cup granulated sugar
½ cup light brown sugar
1 large egg
2 tsp pure vanilla extract
1 cup all-purpose flour
½ tsp baking soda
226 gm dark chocolate, roughly chopped

Method
1. Preheat the oven to 350°F.
2. In a medium saucepan, melt the butter over medium heat. Turn off the heat and stir in the espresso powder. Transfer the mixture to a medium heat-safe bowl and let cool.
3. In a bowl, add the granulated sugar and brown sugar to the butter and whisk to combine. Add the egg and vanilla extract and whisk well to combine.
4. To this, add the flour and baking soda and stir the mixture just until it is fully incorporated.
5. Stir in the chocolate chunks, then cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
6. Line two baking sheets with parchment paper. Scoop the dough into one-fourth cup-sized balls onto the prepared baking sheets, leaving at least 1.5 inches between each cookie to allow room for spreading.
7. Bake the cookies until they are set around the edges, 12 to 15 minutes.
8. Cool completely on the baking sheet and enjoy!

Cold Brew Ice Pops
Prep time: 10 minutes
Cooking time: 10 minutes + Freezing time
Makes: 6 pops

Ingredients
2½ cups cold brew coffee, divided usage
1/3 cup sugar
½ cup half-and-half

Method
1. In a small saucepan over medium heat, bring half a cup coffee and the sugar to a simmer, stirring continuously until the sugar has dissolved. Remove from heat.
2. Pour the remaining two cups coffee into a pitcher (or another container with a spout, like a liquid measuring cup). Add the warm coffee-sugar mixture and the half-and-half and stir to combine.
3. Pour the mixture into popsicle moulds, filling each to about a quarter inch from the top. Add two teaspoons of coffee beans, if desired, and insert sticks.
4. Freeze until solid, at least three hours. Store in the freezer for up to two weeks.

White Chocolate Mocha Cake
Prep time: 30 minutes
Cooking time: 45 minutes
Makes: 3 cakes (6 inches each)

Ingredients
¾ cup white chocolate chopped
3 cups all-purpose flour
1¼ cups Sugar
1½ tbsp instant espresso powder
1½ tbsp baking powder
1 tsp sea salt
2/3 cup unsalted butter
2 large eggs
1 cup whole milk
2 tsp vanilla extract

Method
1. Line the bottom of three 6-inch round cake pans with parchment paper. Preheat the oven to 350° F.
2. Add the white chocolate to a metal bowl and place the bowl over a small saucepan filled with simmering water. Stir the white chocolate continuously until it is fully melted. Set aside to cool.
3. Place the flour, sugar, instant espresso, baking powder, and salt in the bowl the stand mixer. Stir to combine.
4. Run the paddle attachment on the mixer on medium-low as you add in the butter one tablespoon at a time until fully incorporated.
5. Place the eggs, milk, and vanilla extract in a separate bowl and whisk them together until smooth.
6. Drizzle the milk mixture into the stand mixer slowly and mix to combine, stopping to scrape the bottom and sides of the bowl frequently.
7. Fold in the melted white chocolate until just combined.
8. Bake for 30-35 minutes, allow to cool in the pans and remove before placing on a wire rack to cool completely.

Banana Cake with Coffee Cream Cheese Frosting

Cooking time: 45 minutes
Makes: 1 cake (9×13 inches)

Ingredients For The Cake
2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon powder
½ tsp salt
½ cup unsalted butter
¾ cup white granulated sugar
¾ cup loosely packed brown sugar
2 large eggs
1 tbsp vanilla extract
3 large bananas, mashed
½ cup plain Greek yogurt

Ingredients For The Espresso Cream Cheese Frosting
1 block cream cheese
½ cup unsalted butter
2½ cups powdered sugar
2 tbsp instant coffee powder
1 tsp vanilla extract

Method
1. Preheat the oven to 350°F. Spray a 9×13 (or similar size) baking sheet or dish with nonstick spray.
2. In a small bowl, whisk together the flour, baking soda, cinnamon and salt.
3. In another bowl, beat together the butter and sugars until light and fluffy, about five minutes. Beat in the eggs, one at a time. Beat in the vanilla extract. Lastly, add in the mashed bananas and yogurt, beating until combined.
4. Stir in the dry ingredients on low speed, scraping down the sides if needed, until just combined. Don’t over mix!
5. Pour the mixture into the greased baking dish. Bake for 28 to 33 minutes, or until a tester inserted in the centre comes out clean.
6. To make the frosting, beat the cream cheese and butter together until creamy. Beat in the sugar and espresso powder until combined. Beat in the vanilla extract. Frost the cooled cake, and dig in.
Tip: I like to keep the cake in the fridge because of the cream cheese frosting. Plus, we love cold cake!

While all these recipes sound delicious, they should come with a warning. The combination of chocolate, coffee and sugar is sure to keep you up longer than you might have intended to be!
