EGGS, flour and milk at the ready – tomorrow is Pancake Day, otherwise known as Shrove Tuesday. It marks the start of Lent, which traditionally saw us using up rich foods before 40 days of fasting.

It may be an old Christian tradition but we still love trying to master the perfect pancake. But if you are tired of plain old treats topped with lemon and sugar, LYNSEY HOPE has some unusual recipes you will flipping love.

Pancake day marks the start of Lent, which traditionally saw us using up rich foods before 40 days of fasting

INGREDIENTS:

  • 125g plain flour
  • Salt
  • 1 egg
  • 250ml semi-skimmed milk
  • 1 tbsp butter melted
  • 2tsp baking powder
  • 20g caster sugar
  • 1-2tsp cocoa powder
  • 100g white chocolate drops
  • 40g mini-marshmallows
  • 1 tsp vanilla extract

METHOD:

  1. Sift the flour, baking powder, salt, sugar and cocoa powder.
  2. Separately combine milk, vanilla and egg yolks.
  3. Mix it all together.
  4. Stir chocolate drops and marshmallows into the mixture.
  5. Whisk the egg whites to a stiff peak and fold into the mixture.
  6. Pre-heat a griddle, or a pan if you don’t have one.
  7. Spoon the mixture on to the griddle in even amounts and cook for 1-3 mins until it ­bubbles.
  8. Turn over and cook for 1-3 mins.

INGREDIENTS:

  • 125g plain flour
  • Salt
  • 1 egg
  • 250ml semi-skimmed milk
  • 1 tbsp butter melted
  • 160g of cooked beetroot
  • 1tsp baking powder
  • 50ml honey
  • 25ml vegetable oil
  • 1tsp vanilla extract
  • 50ml Aldi’s Greyson’s Pink Gin

METHOD:

  1. Chop beetroot and put into a food processor with the milk, oil, honey, vanilla essence, eggs and gin.
  2. Blitz until smooth.
  3. Make a well with dry ingredients and mix in liquid ingredients.
  4. For each pancake, add 4tbsp to hot pan.

INGREDIENTS:

  • 125g plain flour
  • Salt
  • 1 egg
  • 250ml semi-skimmed milk
  • 1 tbsp butter melted
  • Pink food colouring
  • M&S Percy Pig sweets
  • Maple syrup
  • Red grapes
  • Whipped cream

METHOD:

  1. Divide the batter into two bowls.
  2. Add two drops of colouring to one bowl for the face and five to the other for the ears and nose.
  3. Make one larger circle with batter and three smaller half-circles.
  4. Roast red grapes with maple syrup at 180C or gas mark 4, for 15 min.
  5. Put cream on top of larger pancake and place smaller one on top.
  6. Then arrange two smaller ones for ears.
  7. Use grapes as a nose and raisins for eyes.
  8. Serve with sweets.

  • 120g Greek yoghurt
  • 2tsp Americano instant coffee
  • 1tsp baking powder
  • 25ml ­vegetable oil
  • 50g caster sugar
  • 50ml of Aldi’s Belluci Amaretto
  • 150g plain flour
  • 50ml milk
  • 2 eggs.

METHOD:

  1. Put the flour, baking powder, coffee and salt into a bowl and mix.
  2. In another bowl, put yoghurt, milk, oil, eggs, Amaretto and mix.
  3. Make a well with dry ingredients and mix in liquid ingredients.
  4. For each pancake, add 4tbsp of batter into a pan.
