BOx KITCHEN has been launched by husband and wife Ainsley and Anne-Marie Neckles, who are the owners of boutique boxing studio BOx.
The business was started by avid boxing fan Ainsley and former fashion buyer Anne-Marie in Loughborough in 2017, with a second studio opening in Enderby in 2018.
Now, the couple are fulfilling their dream of opening a healthy eatery, and hope to build on the success of the BOx KITCHEN smoothie bars, which are located inside their studios.
Customers can enjoy 200 Degrees’ coffee – you might have been in the branch in Leicester’s Market Street – protein smoothies and health shots, along with food such as protein pancakes, smashed avocado with artisan bread, buddha boxes and overnight oats.
With some collaborations on the cards, there will also be what Anne-Marie describes as “naughty treats” along with locally made gifts, and a selection of fitness products that are sold at the BOx studios.
With a style that is both quirky and industrial, and a colour palette of black and copper softened with hints of dusky pink and mustard, the coffee shop aims to be a comfortable place for people to sit and work, or to meet friends.
Being environmentally friendly is also a key factor for the owners. All purchases will be presented on compostable, biodegradable plates, bowls and cups to reduce the amount of electricity and water used for washing pots.
The owners are also planning to work with local homeless charities to reduce the amount of food being thrown away, and to offer any daily food wastage to local farms to feed the pigs.
BOx KITCHEN is open Monday to Friday 8.30am until 4pm, Saturday 9am until 3pm and Sunday 9am until 1pm.
