Cozy up to watch the Friends reunion on HBO Max with this Espresso Mug Cake recipe from Friends: The Official Central Perk Cookbook by Kara Mickelson. The book doesn’t come out until October, but until then, we’ll be making these easy mug cakes inspired by one of our favorite ’90s sitcom characters, Phoebe Buffay.
Friends: The Official Central Perk Cookbook has over 50 recipes inspired by the coffee shop from the iconic show, with everything from appetizers to drinks to desserts. There are also classic stills and quotes from Friends to enjoy with the recipes.
These espresso mug cakes are inspired by season 7, episode 17 (“The One With The Cheap Wedding Dress”). When Ross shares the time his backpack, containing original artwork for his Space Camp comic book, was stolen, Phoebe realizes that she was the one that mugged him. This comforting dessert is sure to bring back childhood memories too, with a quick chocolate cake, peanut butter filling and vanilla ice cream topping.

Add flour, unsweetened cocoa, espresso powder, brown sugar, baking powder and salt to a mug and stir.
In a small bowl, combine whole milk, olive oil and vanilla extract and add to mug. Stir until mixture is smooth and all the dry ingredients are incorporated.
Add a “ball” of peanut butter into the center of the mug.
Microwave one minute on HIGH or until cooked throughout. Let cool slightly, then top with a generous scoop of ice cream. Enjoy!
